RECIPE BY MOON LAI FROM FOODPASSIONICAL
Fried rice that's easy, and packed full of flavour. Delicious on its own but you can also use this as a base for your nourish bowls or buddha bowls.
INGREDIENTS
- 2 cups day old rice
- 1/4 cup french beans, chopped
- 1/2 cup mix vegetable
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 fresh chilli
- 150g fried tofu
- 1/2 tsp dark soy sauce
- 1 tbsp soy sauce
- 1 tsp chilli flakes
- a dash of white pepper
- 2-3 tbsp coconut milk
- 1-2 tbsp oil for cooking
METHOD
- Heal oil, sauté garlic and onion till fragrant. Add in French bean and fresh chilli, fry until tender.
- Add in mix vegetable, fried tofu and rice. Add in all the seasoning.
- Stir fry the rice and vegetable until heated through and combine. Add chopped coriander if desired.
