Delicious choc balls you can't stop at one! These are a lovely in-between snack to stave off hunger and give your body the energy boost that you need on busy weekdays!

makes 24 balls

INGREDIENTS
  • 1 cup raw cashews
  • 10 soft pitted medjool dates
  • 1/4 cup raw unsweetened cacao powder, plus extra for coating
  • 1/4 cup cacao nibs
  • 1/2 cup flax meal
  • 1/2 cup hemp seed
  • 1/4 tsp peppermint extract
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup espresso powder
  • 1-2 tbsp water (if needed)
  • 1/4 cup sugar-free vegan dark chocolate
METHOD
  1. Add all ingredients except water, and chocolate chips to a food processor. Mix on high until a smooth dough forms. Add 1-2 tbsp of water if the mixture is too dry.
  2. Roll into balls and press a few pieces of chocolate chips on the surface.
  3. Serve in your favourite Coconut Bowls and enjoy!
