RECIPE BY MARISSA FROM IT'S ALL GOOD VEGAN

Festive no-bake cookie dough bites. Spiced with cinnamon, ginger, and nutmegand made with a special plant-protein ingredient, chickpeas. This recipe is gluten-free, dairy-free, and only takes 15 minutes to make.

INGREDIENTS
  • Chickpeas, 1 cup
  • Almond Flour, 2 cups
  • Almond Butter, 1/3 cup
  • Maple Syrup, 3 tbsp
  • Cinnamon, 1 tsp
  • Ground Ginger, 1/4 tsp
  • Nutmeg, 1/8 tsp
  • Ground Cloves, 1/8 tsp
  • Salt, 1/8 tsp
  • Chocolate Chips, 1/3 cup
METHOD
  1. Combine all ingredients in a food processor or high powered blender (except the chocolate chips). Pulse until a cookie dough like texture is formed.
  2. Add the chocolate chips and mix using a spoon or your hands. Using a small cookie scoop or a spoon, scoop the dough into bite-sized pieces. 
  3. Form the balls by rolling the dough in-between two hands.
  4. Serve in your favourite Coconut Bowls and enjoy!
