RECIPE BY MARISSA FROM IT'S ALL GOOD VEGAN
Festive no-bake cookie dough bites. Spiced with cinnamon, ginger, and nutmegand made with a special plant-protein ingredient, chickpeas. This recipe is gluten-free, dairy-free, and only takes 15 minutes to make.
INGREDIENTS
- Chickpeas, 1 cup
- Almond Flour, 2 cups
- Almond Butter, 1/3 cup
- Maple Syrup, 3 tbsp
- Cinnamon, 1 tsp
- Ground Ginger, 1/4 tsp
- Nutmeg, 1/8 tsp
- Ground Cloves, 1/8 tsp
- Salt, 1/8 tsp
- Chocolate Chips, 1/3 cup
METHOD
- Combine all ingredients in a food processor or high powered blender (except the chocolate chips). Pulse until a cookie dough like texture is formed.
- Add the chocolate chips and mix using a spoon or your hands. Using a small cookie scoop or a spoon, scoop the dough into bite-sized pieces.
- Form the balls by rolling the dough in-between two hands.
- Serve in your favourite Coconut Bowls and enjoy!
