Milk and cookies are a favourite combo of kids and adults alike. Level up your Milk & Cookies game with this plant-based and healthy recipe! It's the best treat to cheer anyone up!
INGREDIENTS
- COOKIE
- 1/4 cup coconut oil
- 1/4 cup coconut sugar
- 1/2 tbsp flaxmeal + 1.5 tbsp water (mixed together in a small bowl and set aside for 5 minutes)
- 1 1/2 cups almond flour
- 1 tsp vanilla extract
- a sprinkle of cinnamon
- 1/3 cup rolled oats
- 4 medjool dates, roughly chopped (or raisins)
- NICE CREAM
- 5 frozen bananas
- 1 tsp vanilla extract
- 1/4 cup plant-based milk
- cacao nibs, for topping
METHOD
- COOKIE
- Preheat the oven to 350°F.
- In a medium-sized bowl, add your coconut oil and coconut sugar and mix well.
- Add in the flax mixture and stir.
- Add the rest of the cookie ingredients and stir until well-combined.
- Roll about 1 1/2 tbsp of dough and place them on a baking sheet lined with parchment paper.
- Press lightly on the cookies to flatten slightly.
- Bake for 15 minutes or until golden brown.
- Let it rest for 10 minutes before removing from the tray. Letting them cool for a few minutes will make them easier to handle.
- NICE CREAM
- In a high-speed blender, blend all your nice cream ingredients until smooth, creamy and lump-free.
- Serve them in your favourite Coconut Bowls and top with the cookies and some cacao nibs.
