Milk and cookies are a favourite combo of kids and adults alike. Level up your Milk & Cookies game with this plant-based and healthy recipe! It's the best treat to cheer anyone up!

INGREDIENTS
  • COOKIE
    • 1/4 cup coconut oil
    • 1/4 cup coconut sugar
    • 1/2 tbsp flaxmeal + 1.5 tbsp water (mixed together in a small bowl and set aside for 5 minutes)
    • 1 1/2 cups almond flour
    • 1 tsp vanilla extract
    • a sprinkle of cinnamon
    • 1/3 cup rolled oats
    • 4 medjool dates, roughly chopped (or raisins)
  • NICE CREAM
    • 5 frozen bananas
    • 1 tsp vanilla extract
    • 1/4 cup plant-based milk
    • cacao nibs, for topping
METHOD
  1. COOKIE
    1. Preheat the oven to 350°F.
    2. In a medium-sized bowl, add your coconut oil and coconut sugar and mix well.
    3. Add in the flax mixture and stir.
    4. Add the rest of the cookie ingredients and stir until well-combined.
    5. Roll about 1 1/2 tbsp of dough and place them on a baking sheet lined with parchment paper.
    6. Press lightly on the cookies to flatten slightly. 
    7. Bake for 15 minutes or until golden brown.
    8. Let it rest for 10 minutes before removing from the tray. Letting them cool for a few minutes will make them easier to handle. 
  2. NICE CREAM 
    1. In a high-speed blender, blend all your nice cream ingredients until smooth, creamy and lump-free.
    2. Serve them in your favourite Coconut Bowls and top with the cookies and some cacao nibs.
    3. Enjoy!
