RECIPE BY NATURALLY HERBAL MAMA
Chicken nuggets aren't a thing of the past. Make this crunchy nuggets at home using an unusual ingredient - artichokes!
INGREDIENTS
- 2 cups artichoke hearts (about 1 can or 1 jar)
- cooking oil
- WET MIXTURE
- 1 cup flour
- 1/4 cup corn starch
- 1/2 cup - 1 cup water
- 1 tsp smoked paprika
- 1 tsp salt
- DRY MIXTURE
- 1 cup flour
- 1/2 tsp salt
- BREADING
- 1 cup bread crumbs
- 1 tbsp flour
- 1/2 tsp salt
- VEGAN HONEY MUSTARD
- 2 tbsp vegan mayonnaise
- 1 tbsp mustard
- 2 tsp agave
- 1 tsp sriracha (optional, add more or less to taste)
METHOD
- In a medium pot, add cooking oil until it fills up to a height of 2 inches. Turn on the stove and bring it up to medium heat. Keep a close watch and turn the heat to low if necessary.
- Drain your artichokes well.
- Place all the breading, wet mixture and dry mixture inrgedients into three separate containers/plates. Mix well.
- Dip drained artichoke to the dry mixture, coating well. Shake off excess and dip it into the wet mixture. Shake off excess and finally coat the artichoke with the breading. Repeat until all artichokes are coated with the three mixtures.
- Once the oil is hot enough, place a few coated artichokes at a time and cook until all sides are golden brown. Keep a close watch on the heat of the oil to make sure it's hot enough to cook the artichokes. If the heat is too low and the artichokes may turn out soggy.
- Serve warm in your favourite Coconut Bowls and enjoy!
