Recipe by Lara from Vanilla Crunnch

A healthy take on the classic twix bars. Tastes much better than the original. Did we mention that it’s gluten free, vegan and refined sugar free? It has a heavenly coconut-y base, a sweet date & caramel filling and rich dark chocolate coating, all made entirely from natural ingredients. Make a batch on the weekend and keep it in the freezer to enjoy throughout the week!

SERVES 10-12

INGREDIENTS
  • FILLING
    • Agave Syrup, 2 tbsp
    • Coconut Flour, 2/3 cup
    • Coconut Oil, 1/4 cup (melted)
    • Coconut Milk, 3 tbsp
    • Medjool Dates, 14 (pitted)
    • Vegan Butter, 1/4 stick
    • Blackstrap Molasses, 1 tbsp
    • Vanilla Extract, 1 tsp
  • Chocolate Coating
    • Dark Chocolate, 1 cup
    • Coconut Oil, 2 tbsp
    • Coconut Milk, 1 tbsp
METHOD
  1. Filling
    1. For the crust, combine agave, coconut flour, coconut oil and 2 tbsp coconut milk in a mixing bowl. Use your fingers to press into a rectangular container or tin.
    2. For the caramel, use a high-speed blender and combine the dates with the butter, remaining coconut milk, molasses and vanilla.
    3. Pour over crust and place the dish in the freezer while you are making the chocolate.
  2. Chocolate Coating
    1. In a small pot, melt the chocolate and coconut oil over a low heat. Slowly add the coconut milk and stir until well combined. Pour the chocolate over the filling.
    2. Freeze for at least 30 minutes before cutting and serving in your favourite Coconut Bowls.
