SERVINGS: Makes 2 bowls:

INGREDIENTS:

  • 4 tablespoons of chia seeds
  • 1 1/2 cups of almond milk (or milk of choice)
  • 2 teaspoons of vanilla extract
  • 1/2 cup of strawberries

Toppings: Strawberries, coconut flakes, white or dark chocolate (optional)

METHOD:

  1. Stir chia seeds, almond milk and vanilla together well in a jar or bowl. Leave in the fridge for 1 hour (or even overnight), stirring after 20 minutes for best results.
  2. Before serving, mash the strawberries in a bowl and add half the chia pudding. Mix well to incorporate, then layer into bowls with the remainder of the chia mix. 
  3. Add your choice of toppings.
