We love it how creative our #cococommunity can be! This is @clyrenn's Loaded Breakfast Sweet Potato. Enjoy it warm with your favorite toppings and you'll have yourself a really filling and decadent breakfast.

INGREDIENTS
  • Sweet Potato, 1 medium
  • Almond Butter, as needed
  • Fruits
  • Granola
  • Seeds (pumpkin or chia)
  • Shredded Coconut
  • Cinnamon
METHOD
  1. Wash and scrub the skin of a sweet potato. Pat dry with a clean towel.
  2. Carefully prick the sweet potato with a fork.
  3. Bake for 45 minutes at 200 degrees Celsius or until fully cooked through.
  4. Serve in a Coconut Bowls with toppings of your choice such as almond butter, pumpkin seeds, shredded coconut and a dash of cinnamon.
  5. Enjoy!
