RECIPE BY GABRIEL AND BIJAN OF LIVIN LA VEGAN LIFE
Here's a new way to get your caffeine fix! If you need an extra boost this morning but also wanted a dessert, this recipe is perfect for you! Plus, the caramel used in this recipe is naturally sweetened with dates. The chocolate drizzle, caramel and cacao nibs on top adds texture compliments the creaminess of the nice cream.
SERVES 1-2
INGREDIENTS
- COFFEE NICE CREAM
- Bananas, 4 (frozen)
- Almond Milk, 1/4 cup (unsweetened)
- Instant Coffee, 3 tbsp
- CARAMEL
- Dates, 1 cup (pitted and soaked)
- Water,1/3 cup (from soaking the dates)
- Salt, a pinch
METHOD
- COFFEE NICE CREAM
- In a high speed blender, blend the frozen bananas with the almond milk.
- Add the instant coffee, and blend well.
- CARAMEL
- Soak your dates in water for about 20 minutes.
- Drain your dates, but save 1/3 cup of the date water.
- In a small blender, add the soaked dates, date water, pure vanilla extract and salt.
- Blend until smooth-like caramel consistency is achieved.
- Serve in your favourite Coconut Bowl and enjoy!
